Best Ever Spaghetti Bolognese (FODMAP Friendly)

Spaghetti bolognese is one of the things I thought I wouldn’t be able to eat again, or at least for a looong time. Without onion and garlic at the ready, it made me think this dish would have no flavour.

I was wrong!

Ingredients (serves 4):

  • 500g beef mince
  • 1 carrot
  • 1 zucchini
  • 2.5 tbsp tomato paste
  • 400g tinned, chopped tomatoes*
  • GF pasta
  • Garlic infused oil
  • Parmesan cheese, to serve
  • Salt

*Alternatively, you could use the juice from the tinned tomatoes, but use one large fresh tomato.

Method:

  1. Grate carrot and zucchini. Set to side.
  2. In an (garlic infused) oiled pan, start cooking beef mince – separate into small pieces in the pan to cook faster.
  3. One mince has browned all over (~10 minutes), pour in carrot, zucchini and chopped tomatoes and stir through.

  4. Add tomato paste and a sprinkle of salt, and let simmer on low heat for a few minutes (until pasta is done).

  5. Add pasta to boiling water and cook until you like it (~8 minutes)
  6. Once pasta has cooked, you may choose to stir the meat/vegetable mixture through or dollop it on top of the pasta.
  7. Enjoy with parmesan cheese!

This is hardly even a recipe, but is a super quick, super easy way to enjoy the FODMAP diet, and great for children! Be careful with the quantity of tomatoes you consume – this recipe is very moorish, but tomatoes (particularly tomato paste) ARE restricted on the FODMAP diet. With these quantities amongst four people you should be fine.
